Chicken in Coconut Soup With Galingale


 

Preparation :


1. Rinse clean chicken thoroughty and cut into bite-sized pieces.
2. Bring coconut milk to boil over medium heat. Add galingale and stir over low heat until fragrant. Add chicken and simmer until slightly cooked.
3. Season with sugar, lime juice and fish sauce. Add kaffir lime leaves, lemon grass and roasted chili paste and stir to mix.
4. Put in bowl. Add bird' eye chili. Serve hot dissolving 1 teaspoon into the stock.

Bird's-eye chilies, bruised    10
roasted chili paste                1        tbsp
Young Galingale                  15     slices
Lemon grass,sliced on bias 1
Kaffir lime leaves, shredded 3
Sugar                                   1       tbsp
Fish Sauce                           3       tbsp
Lime Juice                            3       tbsp
